There is something wonderfully comforting about warm, freshly cooked bread filled with Greek feta.
These homemade Greek feta pancakes, known as tiganites me feta, are simple little cheese-filled flatbreads that are golden on the outside and deliciously savoury inside.
Made with just a handful of everyday ingredients, including flour, olive oil and authentic Greek feta, they are easy to prepare and perfect for sharing.
In Greece, we enjoy simple dishes like these at any time of day. Serve them warm on their own, or try them with a drizzle of honey for a lovely sweet-and-savoury combination.
Ingredients
- 250g plain flour
- 80ml Greek extra virgin olive oil (approximately 1/3 cup)
- Approximately 180ml lukewarm water, added gradually
- A pinch of salt
- 1 cup crumbled Greek feta cheese
How to Make Greek Feta Pancakes
1. Make the dough
Put the flour, olive oil and salt into a large mixing bowl. Gradually add the lukewarm water, mixing and kneading as you go, until you have a soft dough that no longer sticks to your hands. You may not need all the water, so add it a little at a time.
2. Divide the dough
Divide the dough into 10 equal portions, roughly the size of a walnut. Roll each portion into a ball, then use your finger to make a small hollow in the centre.
3. Add the feta filling
Place a little crumbled feta into the hollow of each dough ball. Bring the edges together and seal the dough firmly around the cheese so the filling is completely enclosed.
4. Flatten the flatbreads
Gently flatten each filled ball between your palms to make a small, flat pancake. Alternatively, use a rolling pin to roll each one into a thin flatbread, taking care not to let the feta break through the dough.
5. Cook until golden
Heat a non-stick frying pan over a medium heat. Cook the flatbreads without adding extra oil for approximately 3–4 minutes on each side, until golden brown and cooked through. Cook in batches if necessary.
6. Serve warm
Transfer the cooked flatbreads to a serving plate and enjoy while warm, when the feta filling is at its best. For a delicious Greek-inspired treat, drizzle with a little honey before serving, or enjoy them just as they are.
A Little Greek Kitchen Tip
The secret to these simple cheese-filled flatbreads is adding the water gradually. You want a soft, pliable dough that is easy to shape without sticking to your hands. Make sure the dough is sealed well around the feta before flattening, so the cheese stays inside while cooking.
If you enjoy the combination of sweet and savoury flavours, try serving these warm feta flatbreads with a little Greek honey. It is a simple touch that makes them extra special.
