Ingredients

For the Biscuits

  • ⅓ cup brandy
  • ½ cup sugar
  • ½ cup orange juice
  • 1 cup ground walnuts (reserve some)
  • 1 cup olive oil
  • 3 cups plain flour
  • ½ tsp ground cloves
  • ½ tsp bicarbonate of soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • Zest of 1 orange

For the Syrup

  • 1 cup sugar
  • 1 cup thyme honey
  • 1 cup water
  • 1 cinnamon stick
  • Strip of lemon peel

For Topping

  • Ground walnuts or crushed pistachios

Method

  1. Preheat oven to 180°C (160°C fan).
  2. Sift flour and baking powder. Add spices.
  3. Whisk olive oil and sugar until combined.
  4. Mix bicarbonate into orange juice, then combine with oil mixture.
  5. Add brandy, zest, and walnuts.
  6. Gradually mix in dry ingredients and knead gently.
  7. Shape into small biscuits and space on tray.
  8. Bake for 25 minutes until golden.
  9. Boil syrup ingredients for 5 minutes.
  10. Soak cooled biscuits in hot syrup.
  11. Top with nuts and serve.
