Traditional Melomakarona
Classic Greek honey walnut biscuits soaked in syrup - pure old‑school comfort.
Ingredients
For the Biscuits
- ⅓ cup brandy
- ½ cup sugar
- ½ cup orange juice
- 1 cup ground walnuts (reserve some)
- 1 cup olive oil
- 3 cups plain flour
- ½ tsp ground cloves
- ½ tsp bicarbonate of soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- Zest of 1 orange
For the Syrup
- 1 cup sugar
- 1 cup thyme honey
- 1 cup water
- 1 cinnamon stick
- Strip of lemon peel
For Topping
- Ground walnuts or crushed pistachios
Method
- Preheat oven to 180°C (160°C fan).
- Sift flour and baking powder. Add spices.
- Whisk olive oil and sugar until combined.
- Mix bicarbonate into orange juice, then combine with oil mixture.
- Add brandy, zest, and walnuts.
- Gradually mix in dry ingredients and knead gently.
- Shape into small biscuits and space on tray.
- Bake for 25 minutes until golden.
- Boil syrup ingredients for 5 minutes.
- Soak cooled biscuits in hot syrup.
- Top with nuts and serve.
