During the thyme season, the hives are surrounded by the wild herbs of the Cretan countryside.
Later, the bees are moved towards the pine forests, where the honey takes on a deeper, richer character.
The result is a lovely balance of fragrant thyme and the deeper, slightly resinous character of pine.

This is an easy honey to enjoy. We particularly like it with thick Greek yoghurt, where the herbal thyme character really comes through. It's also lovely with a good Greek cheese, spread on warm bread or stirred into a cup of herbal tea.
If you're cooking with it, try a little in a dressing or marinade where you want some natural sweetness with a more savoury, Mediterranean character.
