Organic Mountain Savory from Lemnos

Satureja thymbra

Organic Mountain Throubi from Lemnos

If you enjoy the wonderful aromas of Greek cooking, let me introduce you to something a little different: organic mountain savory from the beautiful Greek island of Lemnos.

Known in Greece as throubi, this traditional Mediterranean herb has a wonderfully bold, peppery flavour and a fragrance that reminds you of the dry, sun-soaked hillsides of the Greek islands.

A Little Taste of the Greek Islands

On Lemnos, where the land is rocky and the sunshine plentiful, aromatic herbs are part of the landscape and the local food tradition.

Mountain savory is one of those herbs that Greek cooks have appreciated for generations, and once you try it, you will understand why.

It has a stronger, more warming flavour than many everyday herbs, so you do not need to use much to make a difference to your cooking.

Our mountain savory is organically grown on Lemnos and carefully dried to help preserve its natural aroma. Nothing complicated, just a lovely Greek herb with plenty of character.

How Would a Greek Cook Use It?

There are so many ways to enjoy this herb. In a Greek kitchen, we like ingredients that do their job without too much fuss, and mountain savory is a perfect example.

Try it with:

  • Roast potatoes - sprinkle a little over the potatoes with Greek olive oil, salt and pepper before putting them in the oven.

  • Lamb, pork or chicken - add it to your marinade with olive oil, lemon and garlic.

  • Beans and lentils - a pinch brings a lovely depth of flavour to a traditional Greek bean stew.

  • Fish - use a little with olive oil and lemon for a simple Mediterranean touch.

  • Tomato sauces - add it to a slow-cooked sauce for extra warmth and fragrance.

  • Olives and homemade bread - combine it with olive oil for a delicious Mediterranean dipping oil.

  • Salad dressings - mix a little into olive oil, lemon juice or vinegar.

My advice? Start with a small pinch. Mountain savory has a strong personality, and you want to enjoy its flavour rather than let it take over the whole dish.

A Few Tips to Keep It Fresh

To get the best from your mountain savory:

  • Keep it in a cool, dry place away from direct sunlight.
  • Close the packaging securely after each use.
  • Avoid storing it near the cooker, where heat and steam can affect its aroma.
  • Rub a little between your fingers just before adding it to your food. You will notice the fragrance straight away.
