To create the premium product that arrives at your door, we remove the pits and husks from the olives before we start making our delicious tapenades. The result is a sumptuous olive-based spread that’s low in acidity and high in flavour.
On an enclosed 80-acre land, isolated from other cultivations, in close proximity to the renowned vineyards of Amyntaio, our pepper farm rests at the foothills of Mount Vorras at an elevation of 610 metres.
The particularly dry microclimate of the region, combined with the soil composition and rich ecosystem, creates ideal conditions for cultivating peppers.
The farm's climate is semi-continental, benefiting from the moderating influence of Lake Vegoritida and Lake Petron, ensuring the mildness of the climate conducive to pepper growth.
The soil, calcareous and rich in components, facilitates the necessary drainage.
Our pepper farm's biodiversity comprises wildflowers, herbs, and pepper plants, as well as coleopteran insects, with a notable presence of ladybugs, butterflies, and bees. Their collaboration creates excellent conditions for organic farming.
Planting, harvesting, and weeding are all done by hand. The use of pesticides is strictly prohibited, making our farm independent and unaffected by other cultivations. Only manure from free-range animals is used for fertilisation.
Harvesting begins at the end of August, progressing gradually according to the ripening level required for each product, concluding in mid-November.
